FOOD DIARY: Monday, February 4th Eggplant Penne

Another simple little meal for the Johnson’s was on the cards for last night.

Diane used a sugo that was in the freezer from some unknown date in days past married to the leftover eggplant to make a delightful hardy sauce for the penne pasta.

That and a robust green salad was all that was needed to complete a lovely day in Leeming.

    I was very pleased with this dish: the eggplant was so fresh and tasty and married well with my tomato sauce. For once the leftover bits in our fridge came up to really work some magic.
