FOOD DIARY: Wednesday, March27th

Last night was a pizza night; one reason being that Diane made her mother’s Polish Potato Cakes for lunch and they were as delicious as they were filling.  She has been involved in tracing her Polish ancestry so it was a natural out-growth of that involvement.  Superficially potato pancakes seem so simple but the problem is in the details.  The German version uses mashed potato; this Polish version uses grated potatoes with the water wrung out of them.

The Pizza was a Dr. Oether which is always filling and very tasty.
