After our Greek evening I thought that it would be appropriate to calm down a little and have something simpler and that was my clue to try my first go at Basil Pesto. Diane thought that mine did not have the flavour of the ones she has traditionally made and she also thought that I had processed the Pesto too much. In hindsight I think that I processed it too long also but in my defense it was my first go. It is very quick and easy to make providing you have fresh basil and once it is made will last in the fridge for weeks if it is topped with a little olive oil.
I paired the pesto with some shaghetti and a meal was made. Two glasses of leftover wine and a large salad full of those things that are not on the agenda during diet days.
