FOOD DIARY: Monday, April 15th

Last night Diane made us a delicious Linguine with Salmon which was flavoured generously with saffron; it was the best pasta dish I believe I have ever eaten–anywhere!

If I can interpret her method: I believe she made her wonderful aromatic sauce with a little cream, a splash of white wine, a few crushed cherry tomatoes and salmon pieces. This delightful yet simple sauce (and the simple ones are always the hardest to do) was added to the steaming linguine.

She servered a marvellous salad and highlighted it all with a chilled bottle of Villa Bianchi Verdiccho and a celebration was enjoyed by the assembled group of two.

    I really love this recipe and the very light cream sauce. It can be made with prawns too and a tad of saffron makes the sauce sing.
