FOOD DIARY: Leftover Chicken Cacciatora

Last night was an easy meal; we just heated up the Chicken Cacciatora from the previous night as well the polenta garnished with some  herbed tomato sauce and enjoyed a repeat of that wonderful meal.  There are some really remarkable one-dish meals that can be fixed with European food used as the template.  There is an old cookbook by Nika Standen Hazelton called Continental Cuisine and she runs through the great recipes of Europe and there are some real gems in that cookbook.  The book is long out of print but if you can find a copy then you will have a little treasure.

Of course there was a delicious salad as well as a delicious bottle of wine to ease digestion and in this case it was a Clean Skin ’09 Coonawarra Cabernet Sauviginon.
