Oysters and a French Provencale’ casserole

Last night was left-over night but not the usual “last night’s meal.”  This one was a beaut that was the remains of a brilliant lunch brought to our house by our dear friends Joelle and Kevin.

To begin they brought over two dozen Smoky Bay Oysters from South Australia plus a bottle of an excellent “Clean Skin” sparkling wine which as any person could imagine married fabulously with the oysters.

The second course that she brought to our house was a Provencale’ casserole of eggplant, tomatoes and topped with cheese with Provencale’ seasonings.   We enjoyed this marvellous dish at lunch and there was enough remaining for us to enjoy for dinner that night and for them to have two large serves also.

They also brought pastries for dessert: a complete delicious meal brought to our house; friendship is indeed deep!
